Plant-based foods are taking off faster than a rocket. Fortune Magazine recently reported that plant-based foods are taking over the menu. In March, Forbes reported a study that stated 9.7 million Americans were now following a plant-based diet compared to 290,000 in 2014.
As a corporate speaker, I, oftentimes, mention my struggle with weight loss and how that “struggle” vanished, when I became plant-based. In fact, being plant-based was the key to my weight loss of over 80 pounds.
Now, able to work out 2-3 hours a day, 6 days a week, I’m healthier than most people half my 60 years of age. My weekly meal prep (shown here) consists of a variety of plant-based foods that I use to accentuate my veggie-based lunches, dinners and snacks.
Having achieved my certification in plant-based nutrition from Cornell University and being a living example of how powerful a plant-based diet can be, (not just for your health, but more importantly, for the animals themselves and the environment) I’m looking forward to sharing that healthy information at upcoming meetings and events that focus on health, environment and compassion.
